Easy Curry Snacks

A simple and crispy curry triangle recipe using rice paper wraps that the whole family will enjoy.


INGREDIENTS:

  • 1/2 red onion
  • 2 tsp turmeric powder
  • pinch of cumin powder
  • Curry leaves, thinly sliced (optional)
  • 2 small Potatoes, peeled and finely diced
  • 1 small carrot, peeled and finely diced
  • 1/2 cup baby peas
  • salt and pepper to taste
  • Rice paper wraps
  • Olive oil
  • Bowl of water, room temperature
METHOD:
  1. Sauté onion, turmeric, cumin powder and curry leaves in a pan with olive oil, until onion is softened.
  2. In a separate pot, boil carrot and potatoes for approx 5 minutes or until cooked. Strain the water out, add peas. Add to the pan with spices, sauté for 1-2 minutes. Season with salt and pepper to taste.
  3. Cool filling mixture, place it in the fridge for approx 15 minutes. (Laying the mixture out onto a tray will help the cooling time).
  4. When the filling is cool, dip rice paper wrap in to the bowl of water (for 2 secs) and take it out straight away, lay it flat on a plate and place a tablespoon of filling on one side of the rice paper wrap, in a triangle shape. (Imagine the rice paper wrap split diagonally in 3 - giving 6 triangle segments, like a pizza, and place it in one segment.)
  5. Fold the rice paper wrap in half, keeping the filling in that same segment. Now you will have a semi-circle with one third of the segment with filling. Fold it over so that it stays in that same small triangle shape, and repeat one more time. Then seal the end by folding over and pressing down firmly.   6. Place your folded triangles on a non-stick tray, making sure there is space between so that they do not stick together.
  7. Add oil to a fry pan, enough to cover the base of the pan. Pan fry until slightly golden and crisp and repeat by flipping over the other side (approx 2 mins on each side). Note: If using a stainless steel pan, season the pan for 2 mins on low heat before placing triangles on to prevent sticking.
  8. Once cooled down, enjoy your crispy curry snacks!
